This cooked rice with Japanese red beans is alpha rice and uses low-amylose rice which has the best taste and the best texture among the species of rice, considering astronauts' possible changing sense of taste in space. The hot water available on the ISS can be used to reconstitute the rice in its original delicious state.
A domestically-produced glutinous rice and red beans produced in Hokkaido are used.
